In the first announcement I read from Carell that he was leaving he also
said the show would continue without him (he seemed to think that Dwight
would be promoted to Manager, but it looks like the rest of the producers
want to leave this open for now (I think Carell will continue as a producer
even after he leaves).

They could still have some version of the scene you imagine even if the show
continues - maybe with the implication that Scott will continue to watch his
office mates in his usual creepy-pathetic way even after he leaves. I think
the show though is so far away from the conceit of a documentary that it no
longer matters how plausible that is.
