It's a talk show bit (that's designed to go viral), not a classic concert
recording. And the bit is designed to work with Iggy Azalea on roads in Los
Angeles. McCartney in Liverpool is way above and beyond; you can imagine
how much preproduction work was involved to arrange for taping in so many
places.

I suppose the DaVinci equivalent would be those old Letterman bits where
they'd announce at the beginning of the show that Leonardo was painting a
portrait of Biff Henderson, and then checking back through the hour. It
would probably have its moments, but it would be silly to complain that you
didn't get another Mona Lisa in the end.
