We are experiencing the exact same problem here with the exact same versions of UV, the OS and RedBack, and we haven't found any information on it. We also are running Universe and IIS on separate servers.
RedBack 4.1 is supposed to be extremely stable, and the upgrade to 4.2 is not supposed to bring any more stability, but we are in the process of upgrading anyway (done on our dev server), to see whether this might fix any issues. I would be thrilled to hear anything further on this, but I unfortunately have nothing to bring to the table myself besides the report of the same issue.
