The protocols are not written in stone, and most people will not be upset by html mail etc. A few might have problems with it - for instance quite a few Linux users use mail clients that are "text only", by choice. ( mutt, alpine etc.) For example, it's quite common for some people to use email on Linux remotely from, say, an ssh log-in to a server or shell account, without graphics ( "secure telnet", sort of).
