So would it be worth trying to set this server up properly as a dhcp
and dns server now (I have lamp installed on lubuntu 11.10 now) or
just bring along a router and use it as a DHCP server and point the
ubuntu repo to the local machine?

I'm pretty sure I can make the server work as a repository using
http://popey.com/blog/2006/10/24/Creating_an_Ubuntu_repository_mirror_with_apt-mirror/
but it's the other magic I'm not sure of.
