Ben, Have you tried... just double clicking on the pdf? It should automatically open in 'Document Viewer' which is the program evince and is not in the Applications menu. I guess it was disabled from showing in the menu because someone decided it didn't actually need to be in there since it just works when double clicking on PDFs.
