I have just switched from pulseaudio to ALSA using this tutorial http://idyllictux.wordpress.com/2008/10/29/alsa-instead-of-pulseaudio- for-ubuntu-810-intrepid-a-non-destructive-way/ and now wine applications are starting up as they should be. In my case the wine applications were waiting for the pulseaudio server to start.
