Customization of such services linked to the the 'sv' binary are done by editing /etc/sv/git-daemon/run. Unfortunately, this is documented *nowhere* for people unfamiliar with sv. And manual editing of runtime scripts, such as this one, is begging for erroneous entries to occur and disable the service.
gitosis publishes a tool called etc-event.d-local-git-daemon.
