I did not 'miss' the keyboard configuration - with Apple keyboards the
xorg "pc104" "us" setting is the closest match I could find for the
keyboard, much better than the "uk" keymap.

I believe the problem is not with xorg.conf but with the keymap.

Ubuntu needs to have built-in keymaps for (at least UK and US) Apple
keyboards given the number of users running it on their Macs and iBooks
etc., or a user friendly way of changing the default keymap.
