Ian, I guess that I know what effect you want to achieve (please correct me if I'm wrong). Having opened /home/ian folder you want to change background within eg. Documents folder only, but without openning it, just dropping colour directly to folder icon. Am I right? As far as I know it is impossible, you have to open folders one by one to change background of each. And I think that documentation explains it clear :-) If you think that document should be corrected, please show us unclear paragraph. You can also report a bug as a wishlist against nautilus package with proposition to add above feature.
