I've managed to resolve the issue with a kludge. Workaround is here:

Luckily I kept my XP partition around just in case something like this
happened. I've attached copies of the EDID read through ubuntu, as well
as a copy using the Phoenix tool in windows. Since the EDID read by
windows makes X work properly, I'm assuming that the edidfail problem is
related to the proprietary NVIDIA drivers, though if someone could
clarify that for me I'd appreciate it.

All in all, as crappy as this bug was, it gave me an opportunity to
learn what the heck an EDID was :P
