When pressing "e" I'm correctly prompted for username and password. However, having entered the correct superuser information as defined in /boot/grub/grub.cfg, the screen just reverts to the main menu. By the way, enabling the console mode by GRUB_TERMINAL=console in /etc/default/grub had no effect on the appearance of grub...
