Sorry to hear Ubuntu One is not working as expected. Ubuntu One does not support symlinks. You can see bug 406930 for more on this. In your test case if you replaced 'gnome-open link-to-folder' with 'gnome-open folder' you should be able to sync that folder without any problem.
