Your document prints in colour on my Canon i965 (using the BJC8200 Foomatic driver) with Ubuntu 10.04 "Lucid Lynx". I also have another machine with Ubuntu 11.04 "Natty Narwhal" but I haven't tested it on that.
Does it work for you on a later version of Ubuntu?
