If you do not want to wait for an automatic update, you can edit the
printer's PPD file in /etc/cups/ppd/. Find a line like
*Ink MONO/Monochrome: "<</cupsBitsPerColor 8/cupsColorOrder
0/cupsColorSpace 1/cupsCompression 1>>setpagedevice"
and replace "/cupsColorSpace 1" by "/cupsColorSpace 0". Then restart
CUPS ("sudo restart cups").
Now the monochrome mode ("Ink=MONO") should work correctly.
