OK, I have some more info. This seems to have been a configuration
problem. I had a typo in my BusID line and it wasn't actually
loaded, when i finally got it right and moved all the "Option" lines
to the right place under the screen section everything started working
ok. If I have any more problems I'll post back here.

I would suggest looking at the configuration of xorg.conf after
installing/setting up the nvidia packages. It probably should have
added the PCI line for me. Also I had to look up the various Options
on the forums to get the acceleration working. I'm sure someone is
working on those scripts. If anyone is interested here is the
relevant section of my xorg.conf after I got everything working.

Section "Device"
Identifier "NVIDIA Corporation NV41.1 [GeForce 6800]"
    Driver "nvidia"
    BusID "PCI:1:0:0"
EndSection

Section "Screen"
    Identifier "Default Screen"
Device "NVIDIA Corporation NV41.1 [GeForce 6800]"
    Monitor "DELL 2005FPW"
    DefaultDepth 24
    Option "RenderAccel" "True"
    Option "Accel" "True"
    Option "AllowGLXWithComposite" "True"
    Option "AddARGBGLXVisuals" "True"
...
