Sorry, you got it wrong, this is not the feature you described. This is not about the message list columns themselves but the 'View Columns' context menu where you add/delete columns to/from you message list view. This contect menu appears if you right-click with your mouse on a column header in the message list view. The screen shots show very clearly what's wrong.
If you activate sender and receiver columns so that both are shown, you only get a checked 'receiver' entry in the 'View Columns' menu. Sender is not there, although you have the column enabled. And if you uncheck 'receiver' not the receiver but the sender column is disabled. This is clearly not a feature but a bug.
