I use iBook g3 500 and ubuntu dapper (updated 2 weeks ago). I have same problem - sound begin to freeze after 2 minutes when I use ESD or ALSA in any player (XMMS, Rhyphmbox, Totem, GMPC). Then I use OSS in XMMS or GMPC it plays better, sometimes OK. In breasy all works good.
