I'm using Gnome 3.4 and I solved simply reading more carefully the guide: http://library.gnome.org/users/gnome-help/stable/contacts-add-remove.html In particular, you must click on the top of the window, near the name of the contact. Nevertheless, I think that this process is not particularly intuitive.
