i cannot reproduce your bug following this procedure.

here, when i click on a WPA-PSK protected network, ask for password
(this time network-manager), i fill the info, and join the network, then
a gnome-keyring dialog pops up and ask me for the keyring  password,
here if i deny the access, the connection is immediately dropped, but if
instead press the Esc key, the gnome-keyring dialog disappears and
doesn't shows again .

perhaps is something in your user's configuration that calls to gnome-
keyring before you try to establish the network connection.

could you please try to reproduce this with a newly created user.
