I think cups 1.7.2-0ubuntu1.1 has trouble handling the '+' in the uri-scheme 
(system-config-printer doesn't accept it in the device-URI text field either), 
in a terminal:
lpadmin -p cp400 -v 
'gutenprint52+usb://Canon/SELPHY+CP400?serial=NONE_UNKNOWN&backend=canonselphy'
lpadmin: Bad device-uri scheme "gutenprint52+usb".

1) Try setting up your printer in the cups webinterface: 
http://localhost:631/admin > Add Printer
Is the gutenprint52+usb option listed there (your lpinfo -v info shows it)?

2) Probably the easiest workaround is to rename 
/usr/lib/cups/backend/gutenprint52+usb to just gutenprint52:
In a terminal:
sudo mv /usr/lib/cups/backend/gutenprint52+usb 
/usr/lib/cups/backend/gutenprint52usb
lpinfo -v
Does step 1 list the gutenprint52usb option now?
Now it should also be possible to set up your printer with 
system-config-printer.
