Thanks for that information.
$HOME/.local/share/applications/virt-manager.desktop overrides the
system .desktop file, and is pointing to an old file which the new
package does not provide. That is why it appears to now do nothing.
(Whether Unity should provide better feedback about that is an open
question; we could mark this bug as affecting Unity to find out)
To fix this, remove that file:
rm $HOME/.local/share/applications/virt-manager.desktop
and log out and back in. virt-manager should then start back up.
