I attached screenshots of top (copy and paste comes out looking like
garbage) before and during the incident, as well as what thunderbird
shows on the screen.

This is what I get in syslog w/ comments:

Hit 'get mail' in thunderbird (same thing happens in Evolution as well)
The disk in-use light goes solid.
Sep 14 07:52:39 chrysalis imapd: Connection, ip=[::ffff:127.0.0.1]

thunderbird times out
Sep 14 07:53:33 chrysalis imapd: LOGIN, user=aaron, ip=[::ffff:127.0.0.1],
protocol=IMAP

This seems to happen anywhere from a few seconds after thunderbird times out to
about a minute after it times out.
Sep 14 07:53:33 chrysalis imapd: DISCONNECTED, user=aaron,
ip=[::ffff:127.0.0.1], headers=0, body=0, rcvd=0, sent=16, time=54

The disk in-use light stays solid for about 30 seconds longer and then stops.
Nothing else is logged, and the system returns to normal.

While the issue is occurring, here's what is in the ps list related to
imap:

12997 ?        S      0:00 /usr/sbin/courierlogger
-pid=/var/run/courier/imapd.pid -start -name=imapd /usr/sbin/couriertcpd
-address=127.0.0.1 -maxprocs=40 -maxperip=20 -nodnslookup -noidentlookup
143 /usr/lib/courier/courier/imaplogin /usr/bin/imapd Maildir

12998 ?        S      0:00 /usr/sbin/couriertcpd -address=127.0.0.1
-maxprocs=40 -maxperip=20 -nodnslookup -noidentlookup 143
/usr/lib/courier/courier/imaplogin /usr/bin/imapd Maildir

13003 ?        S      0:02 /usr/bin/imapd Maildir
