The only simple way to pull the font dependency out would be not to build documentation. The whole of "make doc" fails at some point without. Ok, the other option would be to remove the dependency, check on what font the build fails and add a patch which replaces its use everywhere. I am not sure I could easily come up with a suggestion for a replacement that keeps the produced documents in a reasonable state.
