I've sent the pdf files to http://pdf-analyser.edpsciences.org to see what the difference is.
All samples provide the same set of fonts. But there is a difference between the non-working samples and working samples: non-working test2.pdf and print-to-file.pdf are reported to be created by cairo 1.9.5 (http://cairographics.org) working print-to-file-cups-from-evince.pdf is reported to be created by cairo 1.13.1 (http://cairographics.org).
