Looks like a simple configuration change is needed:

grub-install: error: attempt to install to encrypted disk without
cryptodisk enabled. Set `GRUB_ENABLE_CRYPTODISK=1' in file
`/etc/default/grub'..

** Summary changed:

- attempting install to crypto LUKS w/ win 8.1 GPT UEFI can't install GRUB yet??
+ grub can't install on LUKS without /boot partition, which is not needed with
UEFI

** Changed in: grub-installer (Ubuntu)
   Importance: Undecided => Medium

** Changed in: grub-installer (Ubuntu)
       Status: New => Triaged
