If you really want to get rid of your existing operating systems you should choose the use entire disk option. If you want to keep the partitions around to recover files from, but don't care about being able to boot them anymore, then you need to perform manual partitioning, and set up an EFI system partition. If you want to dual boot, then you need to choose the cancel option and fall back to continuing to boot in bios mode.
