Hi,
this was actually a bug in Grub, see in dpkg logs :
/etc/grub.d/05_debian_theme: line 17: [...]: command not found
I’m closing it now since it was raised against a much older Ubuntu version.
Feel free to open another bug if it still happens on current releases upgrade.
