@Graham & others complaining Take note that the installer has been designed more than a decade ago; but recent hardware have introduced some ubknown concept a few years back: uefi/efi, gpt, nvme. That is way different than the 'legacy' mode known by ubiquity.
Server has already a new installer, but not the desktop yet.
