But you still need the user-themes extension. If you install it, you
switch to the themes installed.

If you want to use the upstream gnome style experience I would suggest
using the other session for this:

sudo apt install gnome-session

Then reboot and select the gnome session from the context menu that
opens when you click the little gear symbol.

Then you have adwaita gtk and shell theme out of the box.
