Thought I'd better give an update on progress from my end. The above task is proving more of a challenge than hoped (not helped by time out on customer sites using different hardware).
The stock 5.8 series kernel (linux-image-5.8.0-53-generic) is reasonably, but not completely, stable. I can generally manage a few days without a lock up and that is pretty much always on a resume or suspend. The issue gets progressively worse as the kernel version increases so I decided to start with the 5.11 series. The first available to download was RC2, and that ran fine for most of a day, but then locked up on a resume and several reboots failed to get to the desktop, so instead of moving on to RC3 as I was expecting I'm backing off to the 5.8 series RC2 to start from there and work my way up.
