Hi Nicolas, thank you for taking the time to open this bug report.
After going through all the logs provided, it appears that this is being
caused by one of the out-of-tree kernel modules that you have installed.
When the kernel headers are being installed, one of the last steps is to
rebuild all of the dkms modules that are installed, and this is what is
failing.
In the DpkgTerminalLog.txt file, towards the end is this:

Perhaps one of the dkms packages doesn't support the newer kernel. If
you remove the dkms modules from the system, and then install the
headers you should not hit this issue.
If you still hit this issue with all the out of tree dkms packages
removed, please re-open this ticket and upload the logs again, and I
will take another look.
