If I inject libfreetype 2.10.1 and libfontconfig 2.13.1 from the Focal archive via LD_LIBRARY_PATH, it clears up the font rendering problems with variable fonts.
So upgrading those libraries in the gnome-3-28-1804 snap would likely solve the problem. There is still the possibility it would introduce problems for other snaps, so it isn't cut and dried that we should make the change.
