It sounds like the dock and the number of monitors are the two main issues.
* Your laptop's USB-C port only supports DP1.4, so is limited to HBR3 which can drive the Samsung G9 at 120Hz true colour (or 97Hz in deep colour/HDR) under ideal conditions with a perfect cable, but will have no additional bandwidth to drive the second monitor (unless you limit both of them to 60Hz). * USB-C docks reduce the signal quality, so expect lower capabilities than just plugging directly into the laptop. Also I've had bad experience with Ugreen display cables myself recently. Basically I think you need to eliminate one monitor or the dock itself. It looks like the laptop has a lot of spare bandwidth on its own HDMI port so I would consider plugging one monitor into that instead.
