Thank you for the suggestion. I can confirm that following the steps to
downgrade to bluez=5.72-0ubuntu5 has resolved the issue.

After downgrading, holding the package, and rebooting, my Redmi Buds 5
Pro now connect and function correctly as an audio device. This confirms
that the issue is a regression in the 5.72-0ubuntu5.1 update.
