Only other hint I can see,
analog-input-internal-mic: Microphone interne (type: Mic,
priority: 8900, availability group: Legacy 1, availability unknown)
analog-input-headset-mic: Microphone casque (type: Headset,
priority: 8800, availability group: Legacy 2, availability unknown)
Your internal mic has a higher priority than the headeset mic, that
might explain why the headset mic is not automatically switched do.
If you set the headset mic as the default in pavucontrol, I'd expect the
wireplumber state file to save that choice and you not have to do it
again. Please post screenshots of pavucontrol's "Input Devices" tab and
the contents of
~/.local/state/wireplumber/default-nodes
