I had what I think was a similar problem. NVIDIA 580 version complained about dependencies with the 570 version. I though that was very strange and I hope it gets fixed so others don't trip over it.
In case you are still stuck ... After some searching I found a solution that worked and that was to remove all traces of the NVIDIA driver, reboot (and by default the Nouveau driver - very basic but usable, and from there I could, under Software & Updates - Drivers tab, select NVIDIA 580 driver and it was then installed. Another reboot and everything was back to normal and on the 580 driver version.
