You can enable debug logging in the user service by,

systemctl --user edit pipewire.service

And then adding

[Service]
Environment=PIPEWIRE_DEBUG=4

Above ### Edits below this comment will be discarded

Then restart the service: systemctl --user restart pipewire.service

Hopefully when it crashes again your journal will have actionable clues.
I warn you, it is verbose so you may want to vacuum your journal after
you reproduce it.
