This is the answer that I got from upstream:

I think you would need to be much more recent than 0.5.0 though. We
recently released 0.7.0 which has the GPU accelleration - I would
recommend starting there, but if you self build libcamera you will also
need to self build pipewire and re-install both to account for the ABI
updates between those versions.[…]

You should be able to use the 'Simple' pipeline handler which
incorporates the Software ISP and can process and manage the sensors for
you. If you upgrade or self compile libcamera 0.7.0, I can confirm we have
this line which should enable the pipeline for you
