Correction/update: I discovered that my 5.1 front L/R speakers had been
connected to the gray jack, but according to the motherboard manual gray
is side speaker out for 7.1/8-channel. For 5.1 the front L/R speakers
must be connected to the green/lime jack.

After moving front L/R to green, ALSA jack detection reports:
Line Out Front Jack: on
Line Out Surround Jack: on
Line Out CLFE Jack: on
Line Out Side Jack: off

Direct ALSA surround51 playback now produces sound from all speakers in
the correct order.

The original PipeWire/WirePlumber issue may still need retesting
separately with the corrected cabling.
