From the FFe perspective alone I think this is fine, but it is not fine
to go ahead of Debian ("take over") the src:uv package and stop building
python3-uv-build. The Ubuntu source package should keep building
python3-uv-build in a way that is compatible with what is coming from
Debian, or your package should be named something like src:uv-tool, so
with no overlap with Debian.

Note that there are packages the build-depend on python3-uv-build:

$ reverse-depends -b python3-uv-build
