I think uv-* is better than *-uv for discoverability, and to follow an existing pattern.
uv-astral: I am not sure, as Debian's src:uv is also packaging uv from Astral. What about uv-extra? That conveys the idea that it is a source package meant to *complement* Debian's src:uv. Should src:uv start enabling more functionality in the future (which is likely to happen), then uv-extra should reduce scope and leave room to what is built by src:uv. In doing this, it is worth thinking what Debian *may* do in the future, in terms of binary package names or similar.
