Exact boundary, useful for a regression test: 795 characters of plain text survive, 796 disconnect. As CF_UNICODETEXT that's 795×2 + 2 (NUL) + 8 (CLIPRDR_HEADER) = 1600 bytes exactly, versus 1602 for 796, i.e. the first payload that needs a second virtual channel chunk.
