It's unlikely that GRUB destroyed C:\boot. I won't say that it's impossible, but usually GRUB touches your MBR, but not files on filesystems. So can you remeber what you did when you first installed GRUB. Did you resize the Vista partition? Where was GRUB installed to originally? hd0? Or hd0,0?
