1: Most of this data seems eminently automatable, so it might not be that much work. 2: Yes, we (or at least I) want it. Aside from the sheer joy of stats, it gives an idea of how big ubuntu is, how it is growing. Geo-location stats should be very useful in working out where to devote resources. Also, just making stats available will be an incentive for someone to mash them up in new and interesting ways.
