I think you need to install ubuntu-desktop, or basically Ubuntu from
the alternate CD. That will install basic Ubuntu with GNOME (and a lot
of programs). If you need a GUI for a server, it is recommended to use
XFCE (Xubuntu) or Fluxbox (Flubuntu (unofficial)) due to lower
overhead.
