E.g. you can get GUI administration remotely by using eBox to get a web gui on the server and a browser on some other machine. eBox probably has more tools specific to server administration than Xubuntu (XFCE) or GNOME. And also learn some of the reasons why you might want to avoid running a desktop on the server.
