I don't know about a specification but, from "man 5 crontab" on OpenSUSE 13.2 'If MAILFROM is defined (and non-empty), it is used as the envelope sender address, otherwise, "root" is used.' I hadn't thought about the MTA option because I assumed (incorrectly) that it would expect that to be set elsewhere (the MUA). I did find that for Postfix (which seems to be what is installed by Ubuntu) it can be set using the Postfix smtp_generic_maps feature, I'll have to test. Thanks for asking - it challenged my assumptions and hopefully provides a solution.
