What processor do these Apples use? Are you using the right Ubuntu to
match it?

Just to follow up, you should be using the ubuntu-ppc cds. I'm not sure
whether "boot from cd" is enabled on macs by default, so that may be
something to look into...Ubuntu 5.04 does work on the 5500/275 at any rate.
