I've actually managed to sort it out using the Funambol client.  For my 
own use I'd use GMail but I didn't want to risk my clients confidential 
data (no matter how slight the chance of it being compromised).

I've installed eGroupware on the server and configured the Funambol 
Client for Outlook & Thunderbird/Lightning which seems to have done the job.

Now I've just got to work out how to sync it all on Windows Mobile. 
IIRC Windows Mobile supports IMAP and has a Funambol client available 
for it.
